The New Zealand green lip mussel is one of the nutritionally particularly valuable living beings. The seashell is ranging to galler-like protein, which is usually not included in the usual diet. In addition to minerals, trace elements, and amino acids, the seashell also contains a high proportion of glycosaminglycanes (GAG). These are natural substances that are already present as framework substances in the skin, in the connective tissue, in the cartilage and in the articulated fluid. They are less and less accepted with today's food.
